I don’t remember where I first heard about cilantro chicken but it is one of those meals that never lasts long enough at our house to be a leftover. It seemed an appropriate meal during my time with the 21 Day fix program.
I would make the salsa first to allow enough time for flavors to blend and then work with the chicken. While the chicken bakes you can chop more cilantro and shred the cheese and clean up your dishes.
I’m sorry, I don’t have exact measurements when it comes to this meal. It just works.
- Bell Peppers ( I like red, orange and yellow)
- Red Onions
- Jalapeno (optional)
- Lemon juice (fresh is best)
- Lime juice (fresh is best)
- Mexican Oregano (I used dried, fresh would work if you can find it or even regular oregano works)
- Salt and Pepper
Chop the veggies and add to a medium size bowl or make a lot and freeze some for another time. Play with the flavors of the rest of the seasonings in a separate dish until it works for you. I’m always tasting as I go. Add to the veggies and mix, then let it sit to blend flavors and to soften the dried oregano if using.
- Honey ( I think I use about 2 tablespoons)
- Lime juice (fresh is best)
- Tortilla Chips
- Raw Chicken Tenders
- Romain Lettuce
- Shredded cheese ( I like Colby Jack)
- Cilantro for topping
Preheat Oven to 350 degrees.
Warm the honey a little to make it easier to combine with the lime juice to your desired ratio and pour it onto a plate or shallow bowl for dipping.
In a Ziplock bag crush 1 to 2 handfuls of tortilla chips and pour out onto another clean plate. Very lightly spray a cookie sheets with oil just in case the sugar from the honey sticks. Roll a chicken tender in the honey mixture and then in the crushed chips. Place on the prepared cookie sheet. Repeat until all pieces are covered.
Bake until cooked approximately 20-25 minutes. I would check it now and then to make sure the honey doesn’t burn. It also helps not to flip the chicken too much or the chips don’t crisp.
When the chicken is ready and your salivary glands are squirting add a few Romain leaves to your plate, then layer with your chicken, cheese, salsa and top with cilantro. I always find my mom after dinner picking at the remnants of the chips left on the cookie sheet. Makes her happy.
My calculation for the 21 Day Fix is
- 2 greens – 1 green container of salsa, and the lettuce leaves
- 1 red- chicken
- 1 blue – cheese
- 1 tsp for the oil spray
Some of your might ask me about the chips being considered a yellow container. You could count it as a partial if you are so inclined but not all of the chips are going to stick to your portion of the chicken to make up a full container.
